Porcupine Meatballs
1# ground beef
1 egg, beaten
1 (8 oz.) pkg. Beef Rice-A-Roni
2 1/2 C. water
Combine rice-vermicelli from Rice-A-Rone with ground beef and egg. Shape into meatballs, about 20. Brown on all sides in skillet.
Combine contents of Flavor Packet from Rice-A-Roni with water. Pour over meatballs. Cover and simmer 30 minutes.
Thicken gravy, if desired.
Serve with additional rice, mashed potatoes, or noodles/pasta.
To freeze: Place each serving in a zipper style sandwich bag. Divide gravy evenly among servings. Zip closed, removing air as you do. Place in large freezer Ziploc bag, label, and freeze.
To serve: Place in microwave-safe dish, cover, and heat on Medium until heated through, stirring gravy several times during heating.
Makes 5 servings, 4 meatballs each
