9x13 pan = 117 square inches
8x8 pan = 64 square inches x 2 =128 square inches

Yes, you should be able to use 2 8x8 pans.  Since it will occupy 128 sq. in.
instead of 117 sq. in., it will be just a tad thinner and the baking time may be
just slightly less than the recipe calls for.  Just check it for doneness a
little sooner.

I have never done OAMC before but a friend of mine and I are doing this for the
first time Saturday. One of the things we are making is the Holiday Breakfast
Casserole from the Frozen Asset book. It says to pour it in a 9x13 pan but since
we are splitting it (one for my house and one for hers) we want to divide it
into 2 pans. Can we use 2-8x8 pans? If so, do we need to make any changes to the
recipe? Change the cooking time? Thanks for your help. On top of being new to
OAMC we are also not well-experienced cooks. It should be an interesting day!
